Apple and Butternut Squash Hash is the Recipe of the Month for October 2015! It uses two great seasonal items, it's delicious fresh, and it's a good recipe for leftovers, too. You could make extra and bring some in to work for breakfast or lunch! [caption id="attachment_2409" align="aligncenter" width="300"]Apple and Butternut Squash Hash Picture and recipe from PaleOMG.[/caption] Ingredients: 1 small butternut squash, skinless, shredded or grated (or diced) 1 apple, shredded or grated (or diced) 1lb breakfast sausage 4 strips bacon, diced 1/2 yellow onion, diced 1 garlic clove, minced 1/2 tsp dried basil Salt and pepper to taste Directions: 1. Place large skillet over medium heat. Add diced bacon until crispy, place bacon on plate to cool. Mix garlic and onion in to bacon fat. 2. Cook onions and add breakfast sausage to the pan in broken up chunks. Brown the meat until half cooked, then add apple and butternut squash, and basil, salt, and pepper. 3. Cover for 6-8 minutes, mixing occasionally. When sausage is cooked and squash is tender, add bacon in and mix well.
