Avocado Chicken Salad - January 2016
It's a new year of monthly recipes! Eating healthy is something everyone tries to do all year, but especially in the month of New Years Resolutions. Avocado Chicken Salad is simple and quick to make, and all the ingredients are healthy. Things can get hectic and it's good to have a fresh, delicious recipe to fall back on. And here it is! Avocado Chicken Salad is the Recipe of the Month for January! It can be used for sandwiches, crackers, on toast, or in a wrap made of lettuce or tortilla. It's delicious any way you eat it! [caption id="attachment_3599" align="aligncenter" width="300"] Picture and recipe idea from SimplyRecipes.com[/caption] Ingredients: 1 cup chopped chicken, cooked 1 ripe avocado, seeded and peeled 1 apple, peeled and chopped 1/4 cup celery, chopped 1/4 cup red onion, chopped 2 tbsp cilantro or parsley, chopped 2 tsp lime juice 1/2 tsp salt Pepper to taste And something to eat it on, like crackers, chips, or sliced bread. Instructions:
- Mash together chicken, avocado, apple, celery, and red onion with a fork in a medium bowl until well mixed.
- Add cilantro (or parsley), lime juice, salt, and pepper. Stir together until everything is mixed in. If you need more moisture, add olive oil.
- Prepare with your carbohydrate of choice (or lettuce). Put avocado chicken salad on a sandwich as a meal, add to crackers as a snack, or serve in any way you choose!
