Avocado Deviled Eggs
I love avocado in pretty much everything. Guacamole is great, avocado on burgers is great, even avocado in sushi or a milkshake is delicious. So you know I got excited to make avocado deviled eggs. They look striking and they taste amazing. Avocado Deviled Eggs are our Recipe of the Month for April 2016. Give them a shot! [caption id="attachment_4619" align="aligncenter" width="300"] Image from 12 Tomatoes.[/caption] Ingredients 10 hard-boiled eggs 1 avocado 1/4 cup mayonnaise 1/2 tsp salt 1/4 tsp pepper 2 tsp lemon juice 1/2 cup cooked bacon, crumbled up 2 tsp cilantro, minced 1/4 cup shallots, minced Instructions
- Remove shells from hard boiled eggs and cut them in half. Set aside egg whites and scoop out the yolks.
- Mix together yolks, mayonnaise, salt, pepper, lemon juice, and avocado until smooth and combined. Stir in cilantro and shallots.
- Scoop mixture into egg white halves, and sprinkle crumbled bacon bits on top.
Optional: If you like it hot, cut up a jalapeno and add in step 2, or add hot sauce.
