I love avocado in pretty much everything. Guacamole is great, avocado on burgers is great, even avocado in sushi or a milkshake is delicious. So you know I got excited to make avocado deviled eggs. They look striking and they taste amazing. Avocado Deviled Eggs are our Recipe of the Month for April 2016. Give them a shot! [caption id="attachment_4619" align="aligncenter" width="300"]Avocado deviled eggs Image from 12 Tomatoes.[/caption] Ingredients 10 hard-boiled eggs 1 avocado 1/4 cup mayonnaise 1/2 tsp salt 1/4 tsp pepper 2 tsp lemon juice 1/2 cup cooked bacon, crumbled up 2 tsp cilantro, minced 1/4 cup shallots, minced   Instructions

  1. Remove shells from hard boiled eggs and cut them in half. Set aside egg whites and scoop out the yolks.
  2. Mix together yolks, mayonnaise, salt, pepper, lemon juice, and avocado until smooth and combined. Stir in cilantro and shallots.
  3. Scoop mixture into egg white halves, and sprinkle crumbled bacon bits on top.

Optional: If you like it hot, cut up a jalapeno and add in step 2, or add hot sauce.
