Butternut Squash Mac 'n Cheese is a delicious version of the classic food. It uses our homegrown butternut squash and makes a must-try recipe! [caption id="attachment_2109" align="aligncenter" width="300"]Squash mac n cheese Picture and recipe idea from SpoonUniversity[/caption] Ingredients: 1/2 lb elbow macaroni 1/2 butternut squash, cooked and mashed (Optional: Chop up leftover squash into small chunks to add in later!) 2 cups cheese (your choice, use your favorite kind or try a new one!) 2 tbsp butter 3 tbsp flour 1/4tsp nutmeg 2 cups milk 1/4 cup breadcrumbs Salt and pepper to taste Directions:

  1. Preheat oven to 400°F. Cook elbow macaroni, strain, and set aside. Melt butter in a large skillet on medium heat.
  2. Stir in flour and nutmeg and continue stirring for a few minutes. Add milk, increase heat to high and bring mixture to a boil while stirring. Boil until sauce thickens. Set heat to low and stir in mashed butternut squash.
  3. Add mixture to the elbow macaroni and add salt and pepper to taste. Add optional butternut squash chunks if you choose.
  4. Grease a casserole dish or pan. Pour half the macaroni into the pan, sprinkle half the shredded cheese over it, add the remaining macaroni, and sprinkle the rest of the cheese on top, along with breadcrumbs. Bake for 25-30 minutes.
