Our Recipe of the Month for December is Eggnog Cheesecake! It's a seasonal treat, and when egg nog is around, I like to have it a LOT! This recipe is a great dessert, great to bring to holiday parties or eat at home. It tastes festive and will definitely get everyone into the holiday spirit!   Recipe based on: http://allrecipes.com/Recipe/Eggnog-Cheesecake-III/Detail.aspx Eggnog Cheesecake [Crust] 1 cup graham cracker crumbs 2 tablespoons white sugar 3 tablespoons melted butter [Cheesecake] 3 (8oz) packages of cream cheese 3/4 cup egg nog 2 eggs 1 cup white sugar 3 tablespoons all-purpose flour 1 pinch ground nutmeg 3/4 tablespoon vanilla extract Optional: For the traditional taste of rum with egg nog, substitute in 2 tablespoons of rum (not sold at Niagara Produce) instead of vanilla extract. 1. Preheat oven to 325F. Combine graham cracker crumbs, 2 tbsp sugar, and 3 tbsp butter. Press mixture into a 9 inch spring form pan. Once oven is preheated, bake for 10 minutes and cool on a wire rack. 2. Preheat oven up to 425F. Combine sugar, flour, and egg nog with an electric mixer, until smooth. Blend in eggs, nutmeg, and vanilla extract (or optional rum if you choose). Pour mixture into cooled crust from Step 1. 3. Bake for 10 minutes at 425F, then reduce heat to 250F and cook for 45 minutes. Cool and enjoy!
