Serves 4-6 3 boneless and skinless chicken breasts 2 avocados 3 tomatoes 1 onion, chopped 1/4 cup cilantro leaves 1 tbsp oregano 3 cloves of garlic, peeled, chopped 1 tbsp oil 6 cups chicken broth 1. Heat oil in large saucepan, saute the onions and garlic for one minute. Add broth, oregano, and chicken. Bring to a boil, then turn down to simmer for 1 hour. 2. Remove chicken and shred with two forks. Return chicken to saucepan, along with chopped cilantro, chopped tomato, and chopped avocado. Let sit for 10 minutes before serving. Add salt to taste.
