Recipe of the Month July Edition This recipe derived from Simple Gazpacho Ingredients
  • 1lb tomatoes
  • 1 clove garlic
  • 1/4th cup virgin olive oil
  • 1/2 tsp salt
  • 1 tsp white wine vinegar
  • Optional additional ingredients to preference (see below)
Optional ingredients (add some or all):
  • 1/2 cup scallions
  • 1/2 cucumber
  • 1 cob of fresh corn kernels
  • 1 green pepper
  • 1/2 onion
  • 1 hard-boiled egg
Instructions Gazpacho lends itself to personalization. Put ingredients plus all desired optional ingredients in a food processor and blend until they reach desired consistency. Gazpacho can have a smoothie-like consistency, or have chunks the size of peas or walnuts. Try different variations and combinations, or add your own alternative options like jalapenos or tomato juice. Try gazpacho as a chunky soup, or as a smoothie-style drink. The options are limitless!
