Sweet Potato Gnocchi! These small Italian dumplings are quite a treat! Gnocchi are easy to make, and the recipe tends to vary a lot from region to region, or family to family. This version features sweet potatoes and it is one of my favorites! [caption id="" align="alignnone" width="250"] Source: http://allrecipes.com/recipe/sweet-potato-gnocchi/[/caption] Sweet Potato Gnocchi 2 sweet potatoes 1 egg 2 cups all-purpose flour 1 clove garlic, pressed 1/2 teaspoon salt 1/2 teaspoon ground nutmeg 1. Preheat oven to 350°F. Bake sweet potatoes for 30 minutes, then let them cool. 2. Once potatoes are cool, remove skins and mash the potato flesh. Blend in the egg, garlic, salt, and nutmeg. Mix in flour slowly until you have dough. 3. Boil a pot of water. Roll dough into long

snakes, and cut into 1-inch sections. Drop the sections into the boiling water, and cook them until they begin to float. Remove the floating gnocchi with a slotted spoon, and enjoy!   Serving suggestions: These can be served with an Alfredo sauce, pasta sauce, or a brown butter sauce.
