Turkey Bolognese! It's a great meal to prepare after Thanksgiving, using your leftovers to create something new and delicious! Using turkey instead of the traditional beef allows us to use up leftovers in a new and interesting way that is nothing like the meals we had the day before. Video and recipe source: http://www.foodnetwork.com/recipes/giada-de-laurentiis/turkey-bolognese-recipe.html Ingredients: 1/4 cup extra-virgin olive oil 1 onion, chopped 4 garlic cloves, minced 1 carrot, peeled and finely chopped 1 celery stalk, finely chopped 1lb shredded turkey, preferably dark meat 3 cups marinara sauce 1/4 cup chopped fresh basil leaves 1lb spaghetti Grated Parmesan Salt and pepper   1. Heat oil in a large frying pan over medium heat. Add the onion and garlic and saute until translucent (5mins). Add the carrot and celery and saute until tender (5mins). Add turkey and saute 1 minute. Add marinara sauce. 2. Decrease the heat to medium-low and simmer gently for 15 minutes to allow the flavors to blend, stirring often. Stir in basil. Add salt and pepper to taste. In this time, boil water for spaghetti. 3. Cook the spaghetti in a large pot until tender but firm to the bite (about 8mins). Drain. Add spaghetti to the sauce and toss to coat.
