Skillet Salmon and Parmesan Potatoes - March 2015 Image

The Recipe of the Month for March 2015 is Skillet Salmon and Parmesan Potatoes! At the Transit location we get fresh fish daily in the deli from Montondo's, and you have got to try it! If you are avoiding meat, this is a great dish to have on a Friday, or any day! It's easy, simple, and healthy! This is for one meal, but you can easily multiply the recipe for two or more! [caption id="attachment_1780" align="aligncenter" width="300"]Recipe from Health.com Image and recipe via Health.com[/caption] Ingredients 1  salmon fillet Cooking spray 2 medium potatoes 4 tablespoons grated Parmesan cheese 2 cups mixed salad greens 1 cup chopped tomatoes 2 tablespoons low-fat balsamic vinaigrette 1 lemon Salt and pepper to taste 1. Heat skillet or grill pan over medium-high heat. Coat fish with cooking spray. Add fish to pan, and cook 5 minutes on each side (or until the fish flakes easily when checked with a fork). 2. While the fish is cooking, pierce potatoes with a fork and arrange them in a circle on paper towels in a microwave. Microwave on high for 5 minutes, rearrange them, microwave for another 5 minutes, and then let them stand for 5 minutes (the time necessary may vary based on your microwave). You can also boil the potatoes if that is your preference. 3. Cut cooked potatoes in half, and sprinkle them with salt, pepper, and cheese. 4. Toss salad greens, tomatoes, and vinaigrette together in a bowl. 5. Cut lemon in half and squeeze lemon juice over the fish.   Enjoy!
