Sweet Potato Pie - December 2015 Image

Sweet Potato Pie is easy to share for Christmas dinner, or for a dessert at any family meal. It's very simple to make, and it's a delightful treat, and that's why it's our Recipe of the Month! [caption id="attachment_3249" align="aligncenter" width="300"]Sweet potato pie Picture from Flickr[/caption]   Ingredients: 2 cups mashed sweet potatoes 1 pie crust (or make your own) 1/3 cup butter, softened 1/2 cup sugar 2 eggs, beaten 3/4 cup evaporated milk 1 tsp vanilla extract 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp salt   Instructions:

  1. Preheat oven to 425F.
  2. Cream the butter and sugar. Add eggs and mix well. Add milk, sweet potatoes, vanilla, cinnamon, nutmeg, and salt, mix well. Pour mixture into the pie crust.
  3. Bake for 15 minutes before reducing heat to 350F and baking until a knife comes out clean when inserted in the center (~35mins). Cool and store in refrigerator until it's time to eat!

You can eat with whipped cream on top if you would like. Sweet potatoes are a great source of vitamins and minerals, and this is a delicious way to eat them!
